This spectacular dessert is to die for! Cherry Berries on a Cloud has a meringue crust, a cheesecake and marshmallow filling and a fresh strawberry and cherry pie filling for the topping. It's an excellent choice for special occasions like birthdays, anniversaries, Christmas, holiday parties or Valentine's Day.

Ingredients
  

MERINGUE:

  • 6 egg whites (discard egg yolks or use for another purpose)
  • 1/2 tsp. cream of tartar
  • 1/4 tsp. salt
  • 1 3/4 cups sugar

FILLING:

  • 6 oz. cream cheese softened
  • 1 cup sugar
  • 1 tsp. vanilla extract
  • 2 cups whipping cream whipped until almost stiff
  • 2 cups miniature marshmallows

TOPPING:

  • 21 oz. can cherry pie filling
  • 2 cups fresh strawberries sliced or diced
  • 1 tsp. lemon juice

Instructions
 

MERINGUE:

  • In a mixing bowl, beat egg whites, cream of tartar and salt until foamy.
  • Gradually add the sugar, beating on high until stiff peaks form (do not underbeat).
  • Spread evenly in a greased 9x13” baking dish.
  • Bake at 275° for 1 hour; turn off oven--do not open door.
  • Let meringue layer cool in oven overnight or for at least 12 hours.

FILLING:

  • Beat cream cheese, sugar and vanilla until smooth; gently fold in the whipped heavy whipping cream and marshmallows.
  • Spread over meringue.
  • Chill for 4 hours.

TOPPING:

  • Combine topping ingredients.
  • Refrigerate topping until ready to serve.

TO SERVE:

  • Cut dessert into 16 pieces.
  • Spoon ¼ cup topping over each serving.
  • Refrigerate leftovers.

Notes

NOTE: Preparation time does not include time required to refrigerate parts of the dessert or for leaving the crust layer in the oven overnight. NOTE: When making the meringue, add sugar a tablespoon or two at a time and whip about 15 seconds before adding another addition of sugar. NOTE: Once the meringue has baked one full hour. Turn off the oven. DO NOT REMOVE the dessert from the oven or open the oven door. Allow it to settle overnight (in the oven) for at least 12 hours.
